Olive Oil Seeded Granola

Nothing quite makes me feel like I’m on top of the world than when I scoop out homemade granola on yogurt in the morning. I feel unstoppable. I am transformed into the type of person who could go on a run before class just because they had some extra time in the morning, or someone who reads leisurely on a sunday afternoon. I usually change up the recipe depending on what nuts and seeds I have in the pantry, but this is my base recipe.   

Ingredients:

  • 50g pine nuts

  • 350g oats

  • 150g pumpkin seeds

  • Flaky sea salt

  • 1 tsp cinnamon 

  • 1/4 tsp nutmeg

  • 1/4 tsp ground ginger

  • 120g olive oil

  • 150g raw almonds, roughly chopped

  • 150g maple syrup


Method:

  1. Preheat the oven to 350 degrees fahrenheit and line a tray with parchment paper. 

  2. Mix the pine nuts, oats, pumpkin seeds, sea salt, spices, olive oil, and 100g of maple syrup together. Tip the mixture onto the parchment paper and spread out thinly. Place in the oven for 20 mins (halfway through, give it a good mix). 

  3. Mix the remaining maple syrup and almonds together and add them on top of the oat mixture. Place back in the oven for a final 10 mins. 

  4. Once golden and crispy, allow to cool fully before placing the granola in an airtight container.
