Caramelized Upside Down Banana Bread

Ingredients:

5 ripe bananas, peeled

100g unsalted butter, melted

100g greek yogurt

170g brown sugar + 2 tbsp

2 eggs

2 tsp vanilla extra

230g all-purpose flour

2 tsp baking soda

1/2 tsp salt

150g chocolate chips

150g chopped toasted nuts (optional)

Method:

  1. Pre-heat the oven to 350 degrees fahrenheit.

  2. Sprinkle a 9-inch springform pan with the 2 tbsp of brown sugar. Slice 2 bananas lengthwise and place them facing down onto the sugar.

  3. In a large bowl, mash four of the bananas using a fork or in a stand mixer. Stir in the butter, yogurt, brown sugar, eggs, and vanilla.

  4. In a separate bowl, whisk the flour, baking soda, and salt. Add the flour mixture to the banana mixture and stir until just combined.

  5. Fold in the chocolate chips and then pour the batter into a 9-inch springform pan with the 2 bananas inside.

  6. Place the pan into the oven and bake for 60-75 minutes or until a knife comes out clean-ish (with a few crumbs attached).

  7. Remove from the oven and cool on a wire rack. Let it cool for at least 20 minutes before unmoudling.

This tastes best if eaten day of, but it keeps super well if you wrap it tightly with cling-film once its cooled down.
